Greetings from Uncle Ralph,
Uncle Ralph’s Ribs is not just for BBQ. We offer catering for business and individuals in the North Carolina and southern Virginia area. This page contains just a few of the food items that Uncle Ralph’s Ribs offers to its customers.
We can also offer vegetarian plates if needed. Additionally, you can get a quote online at your convenience. When you move the mouse over the "Catering" heading at the top, you will see the option to obtain a quote under the “Catering” drop-down menu.
Here are just a few of the food items we offer:
Entrées
- Uncle Ralph’s Baby Back Ribs – in slabs
(each slab contains approximately 14 ribs) Ribs have the inner membrane removed, coated with Uncle Ralph’s Rib Rub and grilled with Uncle Ralph’s BBQ Sauce.- Southern Fried Steak/Onion Gravy
Cubed Steak, flowered and seasoned, fried in Olive Oil with onions. Gravy, with pan drippings and milk for richness provides a bed for the Southern Fried Steak.- Garden Delicious Spaghetti Sauce
Sautéed onions, peppers and seasonal vegetables are combined with tomato sauce and chunks of tomatoes, olive oil, garlic, spices and seasonings to make this tasty, heart healthy sauce to smother your favorite pasta.
For meat eaters, this sauce can be combined with Italian Sausage or meat balls for a “stick to your ribs” dish.- Turkey & Dressing
Roasted Turkey Breasts and Pan Baked Dressing served with delicious gravy. The dressing is pan roasted, not stuffing for safe cooking and to keep it vegetarian. Seasoned bread with nuts and fruit combine to make a dish that is both a side dish and one that will stand on its’ own as a meet substitute.Side dishes
- Crispy Shredded Cole-Slaw
Shredded Cabbage, Carrots, Sweet Bell Peppers are coated in a sweet-and-sour, fruity and slightly spicy slaw dressing made with Uncle Ralph’s secret blend of spices and natural flavorings.- BBQ Baked Beans
Made with Uncle Ralph’s BBQ Sauce, molasses and other quality ingredients, these beans will deliver taste and satisfaction.- Crunchy-Citrus Candied Yams
Sweet Potatoes baked with a special blend of brown sugar and spices, fruit, nuts and butter. This should be called “Candied Yum!”- Rosemary Roasted Roots
Assortment of root veggies such as potatoes, carrots and onions chunked, tossed and lightly coated in olive oil, sprinkled with cracked pepper and kosher salt and rosemary and roasted to perfection. This dish provides the maximum of flavor for a minimum of calories and fat.- Rice Pilaf
Jasmine Rice cooked with a blend of finely diced vegetables sautéed in a blend of butter and olive oil. This rice dish is delicious on it’s own without being covered with gravy but will stand up to a drenching of the gravy of your choice.Desserts
- Assorted seasonal fruits in natural juice.
This is the only heart-healthy desert here and you should look no further if you are calorie, cholesterol and weight conscious. Turn back now, lest you be drawn into temptation.- Uncle Ralph’s Triple-Chocolate Nut Brownies (Too much is never enough)
Chocolate Brownies with Chocolate Chips and Pecans and/or Walnuts glazed with Chocolate Ganache. Cut and served on trays. This was a recipe that developed from a long friendship with a friend and her family from France. We were all chocoholics and doing our best to upstage each other in the kitchen.- Baklava
Combining several different recipes from one of my favorite Greek cook books; I’ll put mine up against anybody else’s for decadence unlimited. Sticky-sweet honey/lemon flavored thin layers of delicate buttery phyllo dough are filled with a special blend of chopped pecans/almonds/walnuts, sugar and spices.Catering is for the local North Carolina/Southern Virginia areas.
